Another fall fave of my mother-in-law's was 2-2-2 Acorn Squash Pork Chop Foil Bake. Take 2 bone-in center cut pork chops 1" thick, season with s&p, place each on 12" x 18" heavy foil. Cut an acorn squash in half (not too hard to do) and sit one half on top of a chop, cut side UP. Fill cavity with 2 Tbls butter, 2 Tbls brown sugar and 2 Tbls honey. My change up was to then add one shake of cinnamon and a smaller scant shake of nutmeg. Wrap your 2 chop/squash bundles tight. Put on small baking pan lined with foil to catch any leaks and bake at 400 for one hr. The 2-2-2 part flavors the acorn squash and bubbles over onto chop. Let rest 3 minutes before opening. We ate it still in the foil for easy clean up. Gosh, I haven't made it since she passed.....
